Every year on November 26, India celebrates National Milk Day. National Milk Day is observed and celebrated to honour Dr Verghese Kurien, who is also known as the ‘Father of White Revolution’ in the country.  Since 2014, Kurien’s birth anniversary day is observed as National Milk Day with the aim of providing information concerning the need and importance of milk in human life.

1. Biggest producer

India is the biggest producer and consumer of dairy in India. Our country’s total milk production is around 140 billion litres a year.

On average, a normal cow produces about 4 litres of milk per day, while a dairy cow will produce an average of 25-30 litres of milk per day, which equals approximately 100 glasses.

3. World’s rarest cheese

Pule cheese is the world’s rarest and expensive cheese that is made from donkey milk. It takes 25 litres of donkey milk to make just one kilogram of this cheese that is sold at $600/pound.

4. Best source of calcium

Milk is the only food that you can survive wholly on. It contains all the nine essential amino acids, along with protein, calcium, and vitamin D that your body needs on a daily basis.

5. Water adulteration test

Put a drop of milk on a slant surface. If it flows down slowly by leaving a visible trail behind, then it is pure and if it flows down quickly by leaving no mark behind, then it is mixed with water.

6. Purity test

Boil the milk for some time till it turns into Khoya. If the khoya is solid and leaves a rough residue, then it is adulterated and if it leaves an oily residue, then the milk is of good quality.

7. Storing for long

While milk can last for about 3-6 days in the fridge, it can be preserved for up to 6 months by keeping it in the freezer.
